Instructions for making Gochujang Coconut Noodle Soup (Vegan).

  1. (I forgot to take a picture of the tofu)
  2. In a pan (usually a wok, but I used a wok because I had clean hands, that's fine) heat the olive oil over high heat. When the oil is hot, add the tofu. Fry for about 5 minutes before adding the chia seeds and chillies (I only had green but red would be fine). Fry for a few more minutes
  3. Deglaze the pan with the cooking wine, then add the seafood sauce and soy sauce. Cook for a few more minutes, then store in a bowl for later.
  4. In the same pan (you can give it a quick clean or leave the tofu flavored, totally optional) add more olive oil and heat. When it gets hot, add the onion. Fry until light in color. Then add the pepper and cook for a few more minutes.
  5. Add your tomatoes and cook for another 5 minutes, stirring as little as possible. Meanwhile, mix brown sugar, ginger paste, garlic paste, chili oil, saffron/saffron and gochujang in a bowl.
  6. Then add green beans and baby corn. Cook for another minute and add the poke choy and onion. Allow to cook for another minute before adding the pasta puree. Cook for another minute.
  7. Now add coconut milk and kaffir leaves. Mix and cook for 10 minutes.
  8. At the end, add the spinach. Cook for another minute before adding the precooked tofu. (This happens when I make noodles. Follow the package)
