Gallbitang Preparation Guide - Korean Beef Rib Soup

  1. Rinse ribs in cold water for 20 minutes. Change the water several times during this time. This is to remove the red liquid (which looks like blood) from the meat and also to wash off any bone fragments.
  2. Cook over medium heat for 10 minutes in a large pot of boiling water (enough to completely cover the ribs). Rinse and wash the ribs in cold water. Trim the excess fat that appears on your ribs.
  3. Place them in a large, clean pot. Add onion, squash, garlic, black pepper, and water (10 cups) to skillet and bring to a boil over medium-high heat, cover. After boiling, reduce heat to medium and cook for 1.5 hours.
